Understand

The apron protects food from the person wearing it. If the apron goes to the waste area, it picks up contamination that then enters the kitchen. Removing the apron breaks this contamination pathway.

Bins must be in good condition, fitted with heavy-duty liners, and emptied before they overflow. Lids must be pedal-operated or have no lids at all, so staff do not need to touch them with hands that will handle food.

Waste bins must have lids that close properly, kept closed at all times. No waste should be stored on the ground. The area must be hosed down regularly to avoid food residue buildup that attracts pests.

If external bins consistently overflow before collection day, report it to management so they can arrange more frequent collections or additional bins. Don't just work around the problem by piling waste higher.
