Use the ice water test (should read 0°c plus or minus 1°c) and the boiling water test (should read 100°c plus or minus 1°c). Calibration should be checked weekly and recorded on your calibration log.
Insert the probe into the thickest or densest part of the food, where it will be coldest. Wait for the reading to stabilise before recording. The probe must be cleaned and sanitised before and after every use.
A tolerance of plus or minus 1°c is acceptable. If your probe reads outside this tolerance during calibration, it must be replaced or professionally recalibrated before further use.
