Understand
First In, First Out means removing existing stock, placing new delivery at the back, and returning old stock to the front. This thirty-second process prevents older items from being pushed to the back and forgotten.
Use by dates are about safety and are legally enforceable. Food past its use by date must be disposed of immediately. Best before dates are about quality and items may still be safe to consume after the date.
Accepting short-dated stock creates waste or risks serving out-of-date products. Temperature, dates, packaging integrity, and pest activity should all be verified at the point of delivery.
Every day, check fridges, freezers, and dry stores for items approaching their dates, items without labels, and anything that needs rotating or disposing of. Record disposed items in the wastage log.
