Understand

Any situation where using a cloth could spread contamination should preferably use single-use disposable blue centre-feed paper rolls. Single-use means exactly that: use it once, then dispose of it.

Green cloths are for front of house and bar areas, blue for kitchen and food preparation areas, and red for toilets only. Red cloths must never enter a food area under any circumstances.

Carrying an oven cloth on your shoulder or tucked into your apron discourages proper hand washing and picks up contamination from every surface it touches. Oven cloths should be collected when needed, used, and returned immediately.

Reusable cloths must be washed at 90°c to properly kill bacteria. Lower temperatures, even 60°c, will not achieve the same level of disinfection.
