Ready-to-eat foods include cooked meats served cold, cheeses, sandwich fillings, smoked fish, pates, desserts, salads, buffet foods, and any food cooked on site then cooled and served without further heating.
There is no cooking step to protect customers from cross-contamination. Ready-to-eat food must be stored above raw food, prepared on separate surfaces with dedicated equipment, and handled with freshly washed hands.
High-risk ready-to-eat foods prepared on site must be labelled correctly and used within 3 days including the day of production. For example, food prepared on Monday must be used by end of service on Wednesday.
All fruits and vegetables intended for ready-to-eat consumption must be thoroughly washed to remove soil, bacteria, and potential E. coli contamination. Surfaces must be sanitised before preparation begins.
