Shell eggs can harbour Salmonella both on the shell surface and inside the egg. Since cocktails receive no heat treatment, only pasteurised liquid egg eliminates this risk. Raw shell eggs must never be used in drinks.
Once opened, pasteurised liquid egg must be stored below 5°c and used within 2 days. After this period, the product must be discarded regardless of its appearance or smell.
Vulnerable groups including pregnant women, elderly people, young children, and immunocompromised individuals must be warned that a drink contains egg. Staff should proactively communicate this before service.
