Microwave energy causes water molecules to vibrate creating heat, but different food densities absorb energy at different rates. Dense areas cook slower, creating cold spots where bacteria survive even though other parts are hot.
After microwaving, food must be left to stand for the recommended period. During standing time, heat redistributes from hotter areas to cooler spots, helping achieve a more even temperature throughout the food.
Probe the food in multiple locations, especially the densest part. One reading is not sufficient because of uneven heating. If any spot is below the target temperature, continue heating and check again.
Covering food retains moisture and helps distribute heat more evenly. Stirring during cooking moves food from hot zones to cold zones, reducing the temperature differential that creates dangerous cold spots.
