The target is -18°c or colder. Above -15°c, spoilage organisms start multiplying slowly, affecting quality through texture changes, colour changes, and flavour deterioration.
Temperatures must be checked and recorded a minimum of twice daily, once per shift. Consistent monitoring catches problems early, including gradual temperature drift that could indicate failing equipment.
Check for freezer burn, ice crystal buildup, damaged packaging, and items beyond maximum storage times. Apply the FIFO principle with the same discipline as fridge stock, checking frozen dates on labels.
If a freezer fails, assess how long food has been above -15°c. If food has begun to defrost, it must be used within 24 hours and cannot be refrozen. If fully defrosted, standard defrosted food rules apply. Call an engineer immediately.
