Freezing at -18°C or below stops bacterial growth completely, but if your freezer fails you could lose valuable stock and risk serving unsafe food. Regular monitoring catches problems before they become costly failures.
The target is -18°C or below, an international standard across the UK, EU, and most countries. Some businesses aim for -20°C to provide a safety margin. You should never refreeze food that has thawed unless it has been cooked first. Bacteria may have multiplied while the food was thawed, and freezing again does not kill them.
If food is still frozen solid with ice crystals visible throughout, it is safe to keep. If it has thawed completely with no ice crystals remaining, or has been above 8°C for more than 4 hours, it must be discarded. Warning signs of freezer failure include temperatures gradually rising over days, the compressor running constantly, unusual motor noises, and excessive ice build-up despite good door seals.
