Understand

A weekly food safety audit goes beyond daily temperature checks to examine whether your entire food safety system is actually working. Getting it right means catching systemic problems before an inspector does, and getting it wrong means a tick-box exercise that gives you false assurance.

Daily checks answer "is this specific thing safe right now?" while weekly audits answer "are our systems working properly?" Both are essential, but audits catch systemic issues like incomplete records, staff not following procedures, and cleaning schedules that are not being maintained. The audit covers 13 sections: delivery, chilled/frozen/dry storage, staff hygiene and hand washing, food preparation, defrosting, cooking and reheating, hot holding, cooling, cleaning and disinfection, pest control, maintenance, waste management, and allergen management.

A manager or supervisor should complete the audit, ideally not the person directly responsible for the areas being checked. A thorough audit of a typical kitchen takes 30-45 minutes. Rushing through it defeats the purpose entirely. Common mistakes include auditing your own work, rushing through the checklist, not documenting findings, accepting excuses like "we were really busy," and failing to follow up on corrective actions. For each section, record whether items are satisfactory or need action, assign responsibility for corrections, set deadlines, and verify completion before the next audit. Tracking trends over time reveals underlying causes that need addressing.
