Understand

Do not under any circumstances admit liability for any incident, as this can have legal implications for the company. The incident may not be your fault, and admitting liability before investigation prejudices the outcome.

Make a robust record of anything said by the customer, word for word. If they are on site, ask them to sign and date what has been written. For telephone conversations, write everything down vigilantly including date, time, and caller details.

Check all implicated foods for use-by dates and freshness, quarantine suspect foods, initiate chlorine disinfection of boards and knives, check all cold holding for out-of-date products, and walk the kitchen ensuring all systems are being followed.

Inform the local EHO verbally that you have received an allegation, but do not give them a copy of the complaint form. Provide information verbally and retain your documentation.
