Understand

Every food item you receive has been processed, stored, and transported, often changing hands several times. Once you accept a delivery, you take responsibility for that food. Delivery checks are your first line of defence against unsafe food entering your kitchen.

There are three things to check on every delivery: packaging condition (intact seals, no damage, no contamination), temperature (chilled food below 8°C, frozen food below -15°C), and date codes (enough time to use products before use-by dates expire). You should always reject chilled food above 15°C, frozen food that has thawed and refrozen, cans dented at seams, vacuum packs with broken seals, products past their use-by date, and anything showing signs of pest contamination or strong off-odours.

Delivery checks mean nothing if food is then left sitting at room temperature. Prioritise storage in this order: frozen items first, then fresh meat and fish, then other chilled items, and finally ambient goods. Recording the supplier, items received, batch codes, and any issues creates a paper trail. If there is a food safety incident, authorities can trace affected products back to source, and your records demonstrate due diligence.
