Vomiting, diarrhoea, and certain other gastrointestinal symptoms require immediate exclusion from food handling duties. Staff must report these symptoms before coming to work, not after arriving.
Some people continue to shed infectious bacteria for days or weeks after symptoms resolve. This means staff who feel better may still be capable of contaminating food, which is why exclusion periods extend beyond symptom resolution.
Staff must be symptom-free for a specified period, typically 48 hours after the last episode of vomiting or diarrhoea. A fitness-to-work form must be completed before returning to food handling duties.
