Learn the temperatures your dishwasher must reach and how to maintain it, plus how Pilla and AI help you build this into your system.

Join Liam Jones, founder of Pilla and a qualified food safety consultant, for a session on dishwasher temperature.

Understand

The wash cycle must reach 55-60°c for alkaline chemicals to effectively remove soiling. The rinse cycle must achieve 82-88°c to ensure thermal disinfection and kill bacteria.

Food debris and residues can lead to a tenacious salmon pink coloured biofilm that holds bacteria. This biofilm cannot be removed by normal dishwasher cycles and requires manual scrubbing of dishwasher components.

Filters and wash and rinse arms should be removed daily for manual scrubbing and cleaning. Blocked spray holes reduce wash and rinse effectiveness, and accumulated debris leads to biofilm growth.

In hard water areas, scaling acts like a sponge encouraging biofilm growth and reducing heating efficiency. Contact suppliers about salt dosing if scaling develops on heating elements or interior surfaces.
