Chilled foods must arrive below 8°c, with a target of 5°c or below. Frozen goods must be at -15°c or below. Fish must arrive at 4°c maximum. Any delivery exceeding these limits should be rejected.
Check packaging for damage, signs of pest activity, correct labelling, and adequate shelf life. Organoleptic checks include assessing appearance, smell, texture, and overall condition of the products.
Every minute that chilled or frozen food spends outside of temperature control extends the time bacteria can multiply. Deliveries must be checked promptly and moved to appropriate storage within 15 minutes.
Substituted products must be checked carefully for allergen information, as a replacement item may contain different allergens than the originally ordered product. Never accept substitutions without verifying allergen content.
