Understand

Fridge defrosting is the preferred method because it keeps food below 8°c throughout the process. Cold running water is acceptable for emergencies. Defrosting at ambient temperature overnight is never acceptable.

Correct defrosting ensures the cooking process will be even throughout the product. If the centre is still frozen when cooking begins, the outside may be cooked while the inside remains at temperatures where bacteria survive.

Thaw juices from raw meat are highly contaminated with bacteria. Defrosting items must be placed in containment trays on the bottom shelf of the fridge to prevent drip contamination of other foods.

Raw foods previously frozen must be used within 24 hours once fully defrosted. Cooked foods that were frozen must be used within 2 days. Food must never be refrozen once defrosted.
