Understand

Cooked and cooled food has a maximum shelf life of 3 days including the day of production. Food prepared on Monday must be used by end of service on Wednesday. This rule applies to all batch-cooked items.

Raw food that has been defrosted must be used within 24 hours of being fully thawed. This shorter timeframe reflects the additional bacterial growth that occurs during the defrosting process.

Labels must state what the item is, the date it was opened, prepared, or frozen, and the use-by date. For items containing allergens, the allergen information should also be included on the label.

When decanting products from original packaging, the new label must carry forward the original use-by date. The in-house label date cannot extend beyond the manufacturer's original use-by date.
