Understand

Chilled foods displayed at ambient temperature for over 4 hours must be discarded. The clock starts when food leaves refrigeration, not when guests begin eating. Time tracking from first display is essential.

Adding fresh cold food to a tray containing food that has been at ambient temperature mixes safe food with potentially unsafe food. Replace entire trays with fresh batches instead of topping up.

All displayed food must be covered with sneeze guards, cling film, or lids. Every person approaching the table is a potential contamination source through sneezing, touching, or handling serving utensils incorrectly.

If guests wish to take buffet food away, a disclaimer should be provided stating that temperature control can no longer be guaranteed and the food should be consumed promptly or refrigerated immediately.
