Understand

Most fires in commercial premises start when the building is unoccupied. What happens after you leave determines whether you return to a safe building or an emergency. Closing checks systematically address fire prevention, security and handover to the next shift.

Cooking equipment left on is the most common cause of commercial kitchen fires. Closing checks must verify all hobs, ovens, fryers and grills are actually off, not just turned down. Waste must be removed from the building and non-essential electrical equipment switched off to eliminate ignition sources. Refrigeration, freezers, security systems, fire alarm systems and emergency lighting must stay on, but everything else should be switched off.

Issues discovered at close need clear communication. Write handover notes as if the opening person knows nothing about the situation, including what the issue is, what action is needed and any temporary measures in place. Closing checks happen at the end of long shifts when everyone is tired, but the consequences of poor closing can be severe. Walk a consistent route through all areas, physically verify equipment is off and use the checklist every time.
