Remove gross contamination first with disposable paper, then apply detergent to remove remaining residues, then apply sanitiser for disinfection. For allergen spillages, detergent must always be used first because sanitiser alone cannot remove allergen proteins.
Bins should be checked and emptied at regular intervals during peak service, not just when overflowing. At the end of every shift, all bins must be emptied, cleaned internally and externally, and disinfected.
