Understand

Allergen management must cover delivery checks for correct labelling, separated storage, dedicated preparation areas and equipment, and clear communication through to service. Every stage is a potential point of failure.

Use dedicated boards, knives, and utensils. Clean surfaces with detergent first, then sanitiser, as sanitiser alone cannot remove allergen proteins. Never use shared frying oil for allergen-free dishes.

The 14 major allergens must be declared when used as ingredients in any food served, including bar snacks, drinks, and complimentary items. Staff must know how to access allergen information and communicate it accurately.

Any recipe change, substituted ingredient, or new supplier can alter the allergen profile of a dish. The allergen matrix must be reviewed and updated whenever any change occurs to the ingredients used.
