The Pen Factory is a pub and bistro on Liverpool's Hope Street, serving food, wine, cocktails and local beer in the building that once housed the Lang Pen Company.
In a busy kitchen and dining room, the daily cleaning and food safety checks are what keep the business safe and inspection ready. Every one has to be done, recorded, and easy to find again when an Environmental Health Officer or a manager asks to see it.

The challenge
The team liked paper, but paper is hard to store and hard to find again.
Front of house and back of house did not want the same thing. Front of house was happy to run cleaning checks on a screen. Back of house preferred the speed and feel of pen and paper for some jobs. But paper checks pile up in folders, go missing, and are slow to produce when an Environmental Health Officer or a manager wants to see the last month of records.
